Delightful Strawberry Biscuit Bombs combine the sweetness of strawberries with buttery flakiness, perfect for breakfast, brunch, or dessert.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup milk
  • 1 cup fresh strawberries, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix flour, baking powder, salt, and sugar.
  3. Cut in cold butter until the mixture resembles coarse crumbs.
  4. Stir in milk until just combined.
  5. On a floured surface, knead the dough lightly and roll it out to about 1/2 inch thick.
  6. Cut out circles using a biscuit cutter.
  7. In a separate bowl, mix strawberries, cream cheese, powdered sugar, and vanilla extract to create the filling.
  8. Place a spoonful of filling in the center of each dough circle, fold the dough over and pinch to seal.
  9. Place on a baking sheet and bake for 15-20 minutes, until golden brown.
  10. Allow to cool slightly and serve warm.

Notes

Make sure the butter is cold for flakiness. Do not overwork the dough. You can add chocolate chips or other berries for variations.
