A nostalgic dessert that combines a moist sponge with a rich toffee sauce, perfect for both ordinary days and special occasions.

Ingredients

  • 200g dates, pitted and chopped
  • 300ml boiling water
  • 75g unsalted butter, softened
  • 150g brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 175g all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 180°C (350°F). Grease a baking dish.
  2. Soak the chopped dates in boiling water for 10 minutes.
  3. Cream together the softened unsalted butter and brown sugar until fluffy.
  4. Beat in the large egg and vanilla extract until well combined.
  5. Mix together the all-purpose flour, baking powder, baking soda, and salt.
  6. Combine the dry ingredients with the butter mixture, stirring gently.
  7. Stir in the soaked dates along with the soaking water until well combined.
  8. Pour the batter into the prepared dish and bake for 30-35 minutes.
  9. Let the pudding cool slightly before serving.
