A vibrant and customizable meal featuring seasoned steak, fresh veggies, and your choice of rice or quinoa.

Ingredients

  • 1 lb steak (flank or sirloin)
  • 1 tablespoon olive oil
  • 1 bell pepper (sliced)
  • 1 onion (sliced)
  • 2 teaspoons fajita seasoning
  • Salt and pepper to taste
  • Cooked rice or quinoa (for serving)
  • Optional toppings: avocado, cilantro, lime wedges, cheese

Instructions

  1. Heat the olive oil in a skillet over medium-high heat.
  2. Season the steak generously with salt, pepper, and fajita seasoning.
  3. Sear the seasoned steak in the hot skillet, cooking for about 4-5 minutes on each side.
  4. Remove the steak and let it rest to allow juices to redistribute.
  5. Sauté the sliced bell pepper and onion in the same skillet until softened, about 5 minutes.
  6. Slice the rested steak against the grain.
  7. Assemble your bowls with cooked rice or quinoa, sautéed vegetables, and sliced steak, adding optional toppings as desired.

Notes

Leftovers can be stored in airtight containers in the refrigerator for up to 3 days. For meal prep, store ingredients separately.
