A vibrant cheesecake featuring rich flavors and a stunning red, white, and blue swirl, perfect for summer celebrations.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup melted unsalted butter
  • 1/4 cup granulated sugar
  • 4 (8 oz) packages full-fat cream cheese, room temperature
  • 1 cup granulated sugar
  • 1 cup sour cream, room temperature
  • 1 tablespoon pure vanilla extract
  • 4 large eggs, room temperature
  • Red gel food coloring
  • Blue gel food coloring
  • 3 tablespoons of the main cheesecake batter
  • Extra red and blue gel food coloring

Instructions

  1. Prep the pan by preheating the oven to 325°F (163°C) and lining the bottom of a 9-inch springform pan with parchment paper.
  2. Make the crust by combining graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of the prepared pan and bake for 10 minutes.
  3. Beat the cream cheese in a stand mixer on medium speed until smooth.
  4. Add the granulated sugar and beat until combined.
  5. Incorporate sour cream and vanilla, mixing until smooth.
  6. Add the eggs one at a time, mixing on low after each addition.
  7. Color a portion of the batter by dividing it and tinting one with red and the other with blue gel food coloring.
  8. Assemble the layers by pouring the white batter into the crust and dropping spoonfuls of red and blue batter on top.
  9. Create surface swirls using a toothpick to drag lines from the center outward.
  10. Swirl the colors deeper into the batter with a toothpick and knife.
  11. Bake in a water bath for 55-70 minutes until the center is slightly wobbly.
  12. Cool and chill the cheesecake for at least 4-6 hours before serving.

Notes

This cheesecake pairs well with fresh berries or whipped cream and can be stored in an airtight container in the fridge for up to 5 days.
