Delightful blondies packed with light, buttery goodness and vibrant sprinkles that celebrate the essence of spring.

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 cup pastel spring sprinkles
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat the oven to 350°F and line an 8×8 inch baking pan with parchment paper.
  2. Whisk together the flour, baking powder, and salt until combined.
  3. Mix the cooled melted butter with granulated sugar and brown sugar until smooth and creamy.
  4. Incorporate the eggs one at a time, whisking after each addition. Stir in the vanilla extract and lemon zest.
  5. Combine the dry ingredients into the wet mixture until just combined.
  6. Add the pastel spring sprinkles and white chocolate chips.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 18 to 22 minutes or until golden and a toothpick comes out with moist crumbs.
  9. Cool completely in the pan before cutting into squares.
