A quick and nourishing Spinach Feta Frittata that is perfect for breakfast, brunch, or a light dinner.

Ingredients

  • 6 large eggs
  • 1/4 cup milk
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1 small onion, diced
  • 1 tablespoon olive oil or butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the diced onion in a skillet with olive oil until translucent, about 3-4 minutes.
  3. Cook the chopped spinach until wilted, about 2 minutes.
  4. Whisk together the eggs, milk, salt, and pepper in a bowl until well combined.
  5. Add the crumbled feta cheese and gently fold it in.
  6. Pour the egg mixture over the sautéed spinach and onions in the skillet.
  7. Cook on the stovetop for about 3 minutes until the edges begin to set.
  8. Transfer the skillet to the oven and bake for 15-20 minutes until set in the center and lightly golden on top.
  9. Allow to cool for a few minutes before slicing and serving.

Notes

Pairs beautifully with a side salad or crusty bread. Can be stored in the refrigerator for up to 3 days.
