A delicious dish combining tender chicken, creamy cheeses, and nutritious spinach and artichokes, perfect for weeknight dinners or special occasions.

Ingredients

  • 2 chicken breasts
  • 1 cup fresh spinach
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat and sauté garlic until fragrant.
  3. Add spinach and artichokes to the skillet, cooking until spinach is wilted.
  4. In a mixing bowl, combine cream cheese, mozzarella, and Parmesan cheeses with the spinach and artichoke mixture. Season with salt and pepper.
  5. Place chicken breasts in a baking dish and top with the spinach-artichoke mixture.
  6. Bake for 25-30 minutes, or until the chicken is cooked through. Serve warm.

Notes

Make sure to soften the cream cheese ahead of time. You can customize with additional vegetables or spices.
