Spicy Baked Tofu Burrito Bowl

A vibrant and comforting burrito bowl featuring crispy tofu, cilantro lime rice, and a tangy tahini dressing.

Ingredients

  • 1 batch cilantro lime rice or Vegan Mexican Rice
  • 1 can black beans, rinsed and drained
  • 1 avocado, sliced
  • 1 red pepper, chopped
  • 1 orange pepper, chopped
  • 1 block extra firm tofu
  • 2 tablespoons sriracha
  • 1 tablespoon olive oil
  • 3 tablespoons corn starch or arrowroot starch
  • 12 teaspoons coconut sugar or brown sugar
  • 1 teaspoon paprika
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon chili powder
  • 1/21 teaspoon salt
  • 1 batch spicy tahini dressing

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Press the tofu for 5-10 minutes to remove excess moisture.
  3. Mix together the corn starch, coconut sugar, paprika, garlic powder, onion powder, chili powder, and salt.
  4. Prepare the tofu by cubing it and tossing it with olive oil and sriracha.
  5. Coat the tofu with the seasoning mixture.
  6. Roast the peppers seasoned with olive oil and salt alongside the tofu.
  7. Bake in your preheated oven for 20 minutes, then brush with remaining sriracha and bake for another 10-15 minutes.
  8. Assemble the bowls with layers of cilantro lime rice, black beans, roasted peppers, crispy tofu, and avocado slices, drizzled with spicy tahini dressing.

Notes

Store leftovers in airtight containers in the fridge. Keeps well for 3-4 days. Reheat in microwave or skillet.
