A quick and flavorful shrimp rice bowl topped with a creamy, spicy mayo, perfect for weeknight meals.

  • 1 cup white rice
  • 1 pound large shrimp, deveined and peeled
  • 1/4 cup mayonnaise
  • 1 tablespoon Sriracha sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • Green onions, chopped (for garnish)
  • Sesame seeds (for garnish)
  • Lime wedges

Instructions

  1. Rinse the rice thoroughly in a fine-mesh strainer under cold water until the water runs clear.
  2. Cook the rice in a medium saucepan with 2 cups of water, bringing it to a boil, then reducing to a simmer for 18-20 minutes.
  3. Let the rice rest covered for an additional 5 minutes.
  4. Create the spicy mayo by mixing mayonnaise, Sriracha, soy sauce, sesame oil, garlic powder, paprika, salt, and pepper in a small bowl.
  5. Sauté the shrimp in a large skillet over medium-high heat for 2-3 minutes per side until pink and opaque.
  6. Assemble your bowls by dividing the rice and topping it with shrimp and spicy mayo.
  7. Garnish with chopped green onions, sesame seeds, and lime wedges.
  8. Serve immediately and enjoy!

Notes

Shrimp can be substituted with chicken or tofu. Customize the spicy mayo to your taste.
