Fluffy and sweet pancakes coated in cinnamon-sugar, inspired by traditional churros.

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/4 cup sugar (for coating)
  • 1 teaspoon ground cinnamon (for coating)

Instructions

  1. Mix the dry ingredients in a large bowl: flour, 1 tablespoon sugar, baking powder, salt, and 1/2 teaspoon cinnamon.
  2. Whisk together the wet ingredients in a separate bowl: milk, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Preheat a non-stick skillet or griddle over medium heat.
  5. Pour batter onto the skillet, using about 1/4 cup for each pancake. Cook until bubbles form, then flip.
  6. Mix together the cinnamon-sugar coating in a small bowl.
  7. Toss the warm pancakes in the cinnamon-sugar mixture while still hot.
  8. Serve warm with optional toppings if desired.

Notes

These pancakes freeze beautifully, so consider making extra for quick breakfasts.
