A colorful, hearty salad packed with protein and fiber, perfect for meal prep or a quick healthy dish.

Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water to remove its natural coating. Combine with water or broth in a pot; bring to a boil.
  2. Reduce heat to low, cover, and simmer for about 15 minutes until cooked and liquid is absorbed.
  3. Remove from heat and fluff the quinoa with a fork. Let cool to room temperature.
  4. In a large bowl, combine black beans, corn, red bell pepper, avocado, red onion, and cilantro.
  5. Mix together lime juice, olive oil, cumin, salt, and pepper in a small bowl.
  6. Add cooled quinoa to the large bowl, pour dressing over, and toss gently.
  7. Serve chilled or at room temperature, allowing flavors to meld together before enjoying.

Notes

Taste and adjust the lime juice and seasoning as desired. Can be customized with additional vegetables or proteins.
