A vibrant wrap filled with tender marinated chicken and fresh veggies, perfect for any occasion.

Ingredients

  • 0.75 lb boneless, skinless chicken breasts
  • ¼ cup lime juice
  • ½ tsp chili powder
  • 1 Tbsp chipotle pepper in adobo
  • 4 large tortillas
  • 1 cup uncooked rice
  • 1 small red bell pepper
  • ¾ cup corn kernels
  • 1 cup black beans
  • ¼ cup cotija cheese

Instructions

  1. Marinate the chicken by placing diced chicken breasts in a bowl. Pour in lime juice, sprinkle chili powder, and add chipotle pepper in adobo. Let sit for at least 15 minutes.
  2. Cook the rice while the chicken marinates by bringing a pot of water to a boil and following package instructions.
  3. Sauté the marinated chicken in a skillet over medium-high heat with a splash of oil until cooked through, about 12 to 15 minutes.
  4. Sauté the sliced red bell pepper and corn in the same skillet for about 8 minutes, adding minced garlic briefly.
  5. Assemble the wraps by layering tortillas with rice, sautéed chicken, sweet peppers, corn, black beans, and cotija cheese.
  6. Drizzle chipotle crema over the top for extra flavor.
  7. Wrap the tortillas tightly, folding in the sides and rolling from the bottom up. Serve immediately.

Notes

These wraps can be customized with additional ingredients and make great leftovers when stored separately.
