A creamy and delightful dessert combining layers of pudding, ripe bananas, and vanilla wafers, perfect for any occasion.

Ingredients

  • 4 ripe bananas
  • 1 box of vanilla wafers
  • 1 cup of sugar
  • 1/3 cup of cornstarch
  • 1/4 teaspoon salt
  • 4 cups of milk
  • 4 large egg yolks
  • 2 tablespoons of butter
  • 1 teaspoon of vanilla extract
  • Whipped cream (optional for topping)

Instructions

  1. Combine the Base Ingredients: In a saucepan, combine the sugar, cornstarch, and salt. Gradually add the milk while stirring to avoid lumps. Cook over medium heat, stirring constantly, until the mixture thickens and bubbles gently, about 5-7 minutes.
  2. Temper the Egg Yolks: In a separate bowl, beat the egg yolks until smooth. Gradually whisk a small amount of the hot pudding mixture into the yolks to temper them, which prevents scrambling. Next, return the yolk mixture back into the saucepan with the rest of the pudding mixture and cook for another 2-3 minutes, stirring frequently.
  3. Finish the Pudding: Remove the saucepan from the heat, and stir in the butter and vanilla extract.
  4. Layer the Pudding: In a large serving dish, start layering! Begin with a layer of vanilla wafers, then add a layer of banana slices followed by a generous layer of the pudding mixture. Repeat the layers until you finish with pudding on top.
  5. Chill and Serve: Cover the pudding and chill in the refrigerator for at least 4 hours. Top with whipped cream just before serving if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days.
