Deliciously soft sugar cookies filled with rich cocoa buttercream, designed for festive cheer.

  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 3 cups powdered sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, softened
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. In a small bowl, stir together the all-purpose flour, baking soda, and baking powder until well combined.
  3. Cream together the softened unsalted butter and 1 1/2 cups of white sugar until smooth and fluffy, then beat in the egg, vanilla extract, and almond extract until fully incorporated.
  4. <strong gradually blend in the dry ingredient mixture to the butter and sugar mixture, stirring until a soft dough forms.
  5. Roll rounded teaspoonfuls of dough into balls and place them onto ungreased cookie sheets. Flatten each ball slightly with the bottom of a glass.
  6. Bake in the preheated oven for 8 to 10 minutes, or until golden. Let the cookies cool on wire racks.
  7. For the buttercream filling, cream together the softened butter and cocoa powder. Gradually blend in the powdered sugar and milk until smooth. Add the vanilla extract and mix until well combined.
  8. Spread the buttercream on the flat side of one cookie and sandwich it with another cookie. Repeat until all cookies are assembled.

Notes
