  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 3 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 5 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prepare Ingredients: Pat the chicken breasts dry with a paper towel and wash and halve the baby potatoes.
  2. Make Garlic Parmesan Seasoning: Combine the olive oil, minced garlic, dried Italian seasoning, salt, and black pepper in a bowl.
  3. Assemble in Slow Cooker: Lightly grease your slow cooker and arrange the halved potatoes on the bottom.
  4. Add Seasoning and Cheese: Pour the seasoning mixture over the chicken and potatoes, then sprinkle the grated Parmesan cheese on top.
  5. Slow Cook: Cover and set to LOW for 6-8 hours or HIGH for 3-4 hours without lifting the lid.
  6. Finish and Serve: Stir everything together, shred the chicken if desired, and garnish with fresh parsley before serving hot.
