  • 1 medium onion, quartered
  • 4 cloves garlic, minced
  • 45 medium carrots, cut into large chunks
  • 45 medium potatoes, peeled and quartered
  • 2 cups beef broth (halal)
  • 1 tablespoon mustard seeds
  • 1 teaspoon black peppercorns
  • 1 tablespoon whole coriander seeds
  • 23 pieces bay leaves
  • Salt (to taste)

Instructions

  1. Prepare your ingredients by gathering everything at your fingertips, making the cooking process smooth.
  2. Season the corned beef brisket by rinsing it under cold water and patting it dry.
  3. Sauté the minced garlic and quartered onion in a skillet over medium heat until fragrant, about 3-5 minutes.
  4. Layer the sautéed garlic and onions in the slow cooker, followed by the carrots and potatoes.
  5. Lay the corned beef brisket over the vegetables.
  6. Sprinkle the mustard seeds, black peppercorns, whole coriander seeds, and bay leaves over the brisket.
  7. Pour in the beef broth around the edges of the brisket.
  8. Season with salt according to your taste preferences.
  9. Set the slow cooker to cook on low for 8 hours or on high for about 6 hours.
  10. Serve the corned beef after letting it rest for 10 minutes, sliced against the grain with vegetables on a platter.

Notes
