  • 4 Boneless, Skinless Chicken Breasts
  • 1 cup Chicken Broth (or Stock)
  • 1 tablespoon Olive Oil
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Freshly Ground Black Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Dried Italian Seasoning (optional)
  • 1 teaspoon Dried Oregano (optional)
  • 1 teaspoon Dried Thyme (optional)
  • 2 tablespoons Lemon Juice (optional)
  • 1 tablespoon Soy Sauce or Worcestershire Sauce (non-alcohol, optional)
  • ¼ to ½ teaspoon Brown Sugar or Maple Syrup (optional)

Instructions

  1. Prepare Your Chicken: Pat your boneless, skinless chicken breasts thoroughly dry with paper towels. If your chicken breasts are very thick, gently pound them to an even thickness (about ½ to ¾ inch).
  2. Season Generously: Lightly rub both sides of each chicken breast with olive oil. In a small bowl, combine salt, black pepper, garlic powder, onion powder, and smoked paprika. If using dried herbs, add them here too. Sprinkle this seasoning blend generously over all sides of each chicken breast.
  3. Arrange in Slow Cooker: Place the seasoned chicken breasts in a single layer at the bottom of your slow cooker. If necessary, slightly overlap them but keep the layers as thin as possible.
  4. Add Liquid and Flavor Boosters: Pour the chicken broth over the chicken breasts, covering at least half of the chicken. If using optional flavor boosters, add them to the broth now.
  5. Cook to Perfection: Cover your slow cooker and cook on LOW for 2-4 hours or on HIGH for 1-2 hours until the internal temperature reaches 165°F (74°C).
  6. Rest and Finish: Remove the chicken from the slow cooker and tent it loosely with foil. Let it rest for 5-10 minutes before slicing, shredding, or dicing.
  7. Optional Sauce Thickening: To thicken the remaining liquid, whisk together 1 tablespoon of cornstarch with 2 tablespoons of cold water until smooth. Stir this slurry into the hot liquid in the slow cooker and cook on high for about 10-15 minutes until thickened.

Notes

Make sure to dry the chicken breasts well to allow the seasoning to stick better. For even cooking, pound the thicker chicken breasts to a uniform thickness.
