  • 8 oz spaghetti pasta
  • 1 can cream of chicken soup (10.5 oz)
  • 1 can diced tomatoes with green chilies (10 oz)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tbsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. Prepare the Chicken: Place the cut chunks of chicken breast in the base of your Crockpot. Season generously with salt, pepper, garlic powder, and onion powder.
  2. Layer the Creamy Base: In a bowl, combine the cream of chicken soup with the diced tomatoes. Stir well and pour this mixture over the chicken in the Crockpot.
  3. Cook It Low and Slow: Cover the Crockpot and set it to cook on low for 4 hours.
  4. Add the Spaghetti: Once the chicken is tender, break up the spaghetti in half and gently nestle it into the pot. Pour in enough water to just cover the pasta.
  5. Mix in the Cheeses: Stir in the shredded cheddar and mozzarella, allowing them to melt into the mix.
  6. Serve and Garnish: Ladle into bowls and garnish with fresh parsley if desired.

Notes

For a healthier twist, consider using a lower-fat version of cream of chicken or make your own sauce. You can also swap the chicken for turkey, beef, or use extra veggies for added nutrition.
