  • 3 lbs beef chuck roast
  • 1/4 cup lime juice
  • 1/4 cup apple cider vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon paprika
  • 1 tablespoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 bay leaves
  • 12 chipotle peppers in adobo sauce (optional)
  • 1 cup beef broth

Instructions

  1. Combine lime juice, apple cider vinegar, garlic, cumin, paprika, onion powder, black pepper, and salt to make a marinade.
  2. Rub the marinade all over the beef chuck roast, ensuring it is well coated.
  3. Place the roast in the slow cooker and add bay leaves, chipotle peppers (if using), and beef broth.
  4. Cover the slow cooker and cook on low for 8-10 hours or on high for 4-6 hours until the meat is tender.
  5. Remove the beef from the slow cooker and shred using two forks, then return to soak in juices.
  6. Serve with warm tortillas, rice, or your choice of sides.

Notes

For extra flavor, marinate the beef for a few hours or overnight. Ensure to use a good quality beef chuck roast for the best results.
