Delicious Slow Cooker Angel Chicken and Rice Casserole

A comforting slow cooker casserole with tender chicken, creamy sauce, and fluffy rice, perfect for chilly evenings.

Ingredients

  • Boneless, skinless chicken breasts
  • Long-grain white rice
  • Cream of chicken soup
  • Onion soup mix
  • Shredded cheddar cheese
  • Frozen peas or corn
  • Chicken broth

Instructions

  1. Prepare the Slow Cooker by spraying it with cooking spray.
  2. Layer the chicken breasts at the bottom of the slow cooker.
  3. Add the uncooked rice evenly over the chicken.
  4. Mix the cream of chicken soup, onion soup mix, and chicken broth in a bowl and pour over the rice and chicken.
  5. Cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked and rice is tender.
  6. Add cheese about 30 minutes before serving and cover until melted.
  7. Finish with peas or corn just before serving.
  8. Serve warm, optionally garnished with fresh herbs.

Notes

Leftovers can be stored in an airtight container for up to 3 days, or frozen for up to 2 months.
