This delightful skillet meal features juicy chicken thighs coated in a creamy, sweet-spicy bang bang sauce, making for a quick and impressive dinner.

  • 6 boneless skinless chicken thighs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons vegetable oil
  • Green onions (chopped, for garnish)
  • 1/2 cup mayonnaise (or Greek yogurt)
  • 23 tablespoons sweet chili sauce
  • 12 teaspoons sriracha sauce (adjust to taste)
  • 1 teaspoon honey

Instructions

  1. Combine kosher salt, black pepper, and paprika in a small bowl. Apply the seasoning mixture evenly to both sides of the chicken thighs.
  2. Heat vegetable oil in a large nonstick skillet over medium heat. Once hot, add chicken thighs, working in batches if needed.
  3. Cook chicken for 5 minutes without moving to allow browning.
  4. Flip the thighs over, reduce heat to medium-low, and cook for an additional 5 minutes or until the internal temperature reaches 165°F.
  5. Prepare the bang bang sauce by whisking together mayonnaise, sweet chili sauce, sriracha, and honey in a small bowl until smooth.
  6. Remove cooked chicken thighs from the skillet and tent with foil on a plate.
  7. Pour bang bang sauce into the same skillet. Stir and scrape up the brown bits from the bottom. Let it simmer for 1-2 minutes until heated through.
  8. Return chicken thighs to the skillet, coating each piece thoroughly with the sauce.
  9. Garnish with chopped green onions and serve immediately.

Notes

For a lighter option, swap mayonnaise for Greek yogurt. Adjust the sriracha for your heat level preference.
