A delightful and fresh dish perfect for warm weather, these Shrimp Summer Rolls are light, healthy, and packed with flavor, great for lunches or appetizers.

Ingredients

  • Rice paper wrappers
  • Cooked shrimp
  • Rice vermicelli noodles
  • Lettuce leaves
  • Cucumber, julienned
  • Carrots, julienned
  • Fresh mint leaves
  • Fresh cilantro leaves
  • Peanut sauce or hoisin sauce for dipping

Instructions

  1. Prepare the rice vermicelli noodles according to package instructions. Drain and set aside.
  2. Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for about 10-15 seconds until it is soft.
  3. Lay the rice paper wrapper flat on a clean surface.
  4. In the center of the wrapper, layer a small amount of lettuce, noodles, shrimp, cucumber, carrots, mint, and cilantro.
  5. Fold the sides of the wrapper over the filling and then roll from the bottom to the top to encase the filling. Repeat with remaining ingredients.
  6. Serve the rolls with peanut sauce or hoisin sauce for dipping.

Notes

Use fresh ingredients for the best flavor and experiment with different fillings for added variety.
