A comforting and delicious shrimp fried rice that combines plump shrimp and vibrant vegetables, perfect for a quick meal.

Ingredients

  • 2 cups cooked rice
  • 1 cup shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3 green onions, chopped
  • 3 tablespoons soy sauce
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the shrimp to the skillet and cook until they turn pink, about 2-3 minutes.
  3. Push the shrimp to one side of the skillet, and pour the beaten eggs into the other side. Scramble until fully cooked.
  4. Add the cooked rice and mixed vegetables to the skillet and stir everything together.
  5. Pour the soy sauce over the rice and mix well.
  6. Add salt and pepper to taste.
  7. Stir in the chopped green onions.
  8. Serve hot, enjoy!

Notes

For best results, use day-old rice to prevent mushiness. Customize with your favorite proteins or vegetables.
