Delightful melt-in-your-mouth shortbread cookies, perfect for tea or coffee time.

Ingredients

  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter and sugar until light and fluffy.
  3. Combine flour and salt with the creamed mixture until a soft dough forms.
  4. Add the vanilla extract and mix until just combined.
  5. Chill the dough log wrapped in plastic wrap for 30 minutes.
  6. Slice the log into 1/4-inch thick cookies and place on a baking sheet.
  7. Bake for 12-15 minutes until lightly golden.
  8. Cool on a wire rack before serving.

Notes

For a twist, consider adding lemon zest or nuts. Store in an airtight container for up to a week.
