A quick and easy weeknight meal featuring tender chicken and vibrant vegetables in a delightful sesame sauce.

  • 1.5 pounds chicken thighs or breasts
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame seeds
  • Vegetables (e.g., broccoli, bell peppers, carrots)
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Whisk together soy sauce, sesame oil, honey, garlic, ginger, rice vinegar, salt, and pepper in a mixing bowl.
  3. Place the chicken on a sheet pan and pour the marinade over it.
  4. Arrange the vegetables around the chicken on the sheet pan.
  5. Sprinkle sesame seeds over the chicken.
  6. Bake for 25-30 minutes or until the chicken is cooked through and vegetables are tender.
  7. Garnish with chopped green onions before serving.
