Ingredients

Scale
  • 4 salmon fillets
  • 2 cups asparagus, trimmed
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, sliced
  • Salt and pepper to taste
  • Fresh herbs (like parsley or dill) for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Arrange the salmon fillets, asparagus, and halved cherry tomatoes on a large sheet pan.
  3. Drizzle olive oil over the salmon and vegetables, then sprinkle minced garlic, salt, and pepper.
  4. Toss the asparagus and cherry tomatoes gently to coat them in the olive oil and seasonings.
  5. Place lemon slices on top of each salmon fillet, allowing the citrus to infuse flavor as it bakes.
  6. Bake for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.
  7. Garnish with fresh herbs before serving to add a vibrant finish to your dish.

Notes

For best results, use fresh ingredients and do not overcook the salmon. Pairs well with quinoa or a light salad.
