  • 1 pound fish fillets (such as tilapia or cod, cut into bite-sized pieces)
  • 1 cup scallops (fresh or frozen)
  • 4 cups fish or vegetable stock
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 3 medium potatoes (peeled and diced)
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley (chopped, for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Sauté the aromatics by heating olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until soft and fragrant, about 3-5 minutes.
  2. Prepare the potatoes by tossing in the diced potatoes, stirring for a couple of minutes to absorb flavors.
  3. Add the stock, ensuring potatoes are covered. Bring to a gentle boil and simmer until potatoes are tender, approximately 10-12 minutes.
  4. Incorporate the seafood — shrimp, fish fillets, and scallops — into the pot. Stir gently and allow to cook for 5-7 minutes until just cooked through.
  5. Stir in heavy cream and paprika, season with salt and pepper to taste. Let it simmer for an additional 5 minutes to meld flavors.
  6. Garnish and serve by ladling soup into bowls, sprinkling with fresh parsley, and serving with lemon wedges on the side.

Notes

For added depth, sauté the seafood slightly before adding it to the soup. Fresh seafood is ideal but frozen options can save time.
