Savory Juicy Baked Cheeseburger Meatloaf

A comforting meatloaf that combines the flavors of a cheeseburger with tender ground beef and gooey cheddar cheese, topped with a tangy ketchup glaze.

Ingredients

  • 1 pound ground beef
  • 1 whole egg
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup onion, finely chopped
  • 1 tablespoon ketchup
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces cheddar cheese, sliced
  • 2 tablespoons ketchup (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a loaf pan to prevent sticking.
  2. Combine in a large mixing bowl the ground beef, egg, breadcrumbs, milk, chopped onion, 1 tablespoon of ketchup, Worcestershire sauce, Dijon mustard, garlic powder, salt, and black pepper.
  3. Mix gently using your hands or a fork until just combined.
  4. Transfer half of the meat mixture into the prepared loaf pan and press down firmly to form an even layer.
  5. Layer the sliced cheddar cheese over the meat mixture, leaving a small border around the edges.
  6. Top with the remaining meat mixture, pressing gently to seal the edges and encase the cheese within.
  7. Spread the 2 tablespoons of ketchup evenly over the top of the meatloaf.
  8. Place the meatloaf in the oven and bake for 45 to 50 minutes or until cooked through.
  9. Remove from the oven and let it rest for about 10 minutes before slicing.

Notes

Pair with creamy mashed potatoes and steamed green beans. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
