A delightful dish featuring roasted cherry tomatoes, creamy burrata, and crispy bread, perfect for any occasion.

Ingredients

  • 2 lbs cherry tomatoes
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz burrata cheese
  • 1/4 cup fresh basil leaves
  • 2 tbsp balsamic glaze
  • 1 loaf crusty bread, sliced and toasted

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the cherry tomatoes, olive oil, minced garlic, dried oregano, salt, and black pepper in a large bowl.
  3. Spread the tomatoes in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 20-25 minutes, or until the tomatoes are bursting and slightly caramelized.
  5. Toast the sliced crusty bread until golden brown.
  6. Remove the tomatoes from the oven and let cool slightly for 5 minutes.
  7. Arrange the burrata cheese on a serving platter and gently break it open.
  8. Spoon the warm roasted tomatoes and their juices over the burrata.
  9. Drizzle with balsamic glaze and garnish with fresh basil leaves.
  10. Serve immediately with toasted bread slices for dipping.
