A delicious roasted orange chicken infused with vibrant citrus flavors, perfect for family gatherings.

Ingredients

  • Whole chicken (4-5 pounds)
  • Olive oil
  • Garlic (minced)
  • Fresh thyme
  • Fresh rosemary
  • Oranges (zest and juice of 2 large)
  • Honey
  • Soy sauce
  • Dijon mustard
  • Onion (quartered)
  • Chicken broth

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Create the marinade by mixing olive oil, minced garlic, fresh thyme, rosemary, orange zest and juice, honey, soy sauce, salt, and pepper.
  3. Marinate the chicken by rubbing half of the marinade all over, making sure to get it under the skin.
  4. Prepare for roasting by placing quartered onions around the chicken in the roasting pan and adding chicken broth.
  5. Roast the chicken uncovered for 1 to 1.25 hours, basting halfway through.
  6. Rest the chicken for 10-15 minutes before carving.

Notes

For deeper flavor, marinate overnight. For extra crispy skin, increase oven temperature to 425°F (220°C) during the last 10-15 minutes.
