Simple and vibrant tacos filled with crispy roasted chickpeas, avocado, and fresh veggies, perfect for a light yet fulfilling meal.

  • 1 can chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1 avocado, sliced
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • Lime wedges, for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss together the drained chickpeas with olive oil, chili powder, cumin, salt, and pepper.
  3. Spread the seasoned chickpeas out on a baking sheet and roast them for 25-30 minutes.
  4. Warm the tortillas in a skillet or microwave.
  5. Place roasted chickpeas on each tortilla and top with avocado, tomatoes, and lettuce.
  6. Serve with lime wedges on the side for extra flavor.
