A vibrant and flavorful Peruvian dish featuring succulent roast chicken marinated in Aji Amarillo paste, garlic, and lime.

  • 1 whole chicken or chicken pieces
  • 3 tablespoons Aji Amarillo paste
  • 4 cloves garlic, minced
  • Juice of 2 limes
  • 1 teaspoon cumin
  • Salt to taste
  • Pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Create the Marinade: In a bowl, combine the Aji Amarillo paste, minced garlic, lime juice, cumin, salt, and pepper to create a marinade.
  2. Marinate the Chicken: Coat the chicken pieces thoroughly with the marinade and let them marinate for at least 30 minutes (or up to overnight).
  3. Preheat the Oven: Preheat your oven to 400°F (200°C).
  4. Roast the Chicken: Place the marinated chicken on a baking tray and roast for about 40-50 minutes, or until cooked through.
  5. Garnish with Freshness: Once done, take the chicken out of the oven and garnish with chopped cilantro.

Notes
