Delicious and healthy roasted cauliflower tacos that are perfect for vegetarians and anyone looking to reduce meat consumption.

Ingredients

  • 1 head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Corn tortillas
  • Toppings (e.g., avocado, cilantro, lime, salsa)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss cauliflower florets with olive oil, chili powder, cumin, salt, and pepper in a large bowl.
  3. Spread the cauliflower on a baking sheet and roast for 25-30 minutes, or until golden and tender.
  4. Warm the corn tortillas in a pan or in the oven.
  5. Assemble the tacos by placing roasted cauliflower on each tortilla and adding desired toppings.

Notes
