Delightfully roasted cabbage steaks that reveal hidden sweetness and smoky flavors, perfect as a healthy side dish.

Ingredients

  • 1 large head green cabbage (approx. 1.52 lbs / 700-900g)
  • 23 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Prepare the cabbage by slicing the bottom stem off and cutting it into four thick ‘steaks.’
  2. Assemble the baking sheet lined with parchment paper and arrange the cabbage steaks.
  3. Brush the top side of each cabbage steak with olive oil and sprinkle with half of the salt, garlic powder, and paprika.
  4. Flip each cabbage steak and apply the remaining olive oil and seasonings.
  5. Roast in a preheated 400°F (200°C) oven for about 25 minutes or until browned and tender-crisp.

Notes

Feel free to experiment with different spices or add a squeeze of lemon juice or balsamic glaze before serving. Store leftovers in an airtight container for up to 3 days.
