Delicious and vibrant red velvet cupcakes topped with luscious cream cheese frosting.

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 cup vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • Cream cheese frosting for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large mixing bowl, sift together the flour, sugar, baking powder, baking soda, salt, and cocoa powder.
  3. In another bowl, mix the oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar until combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until smooth.
  5. Pour the batter into the cupcake liners, filling each about two-thirds full.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cupcakes cool completely before frosting with cream cheese frosting.
  8. Serve and enjoy!
