Ingredients

  • 1 cup fresh raspberries
  • 1/2 cup granulated sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons gelatin
  • 1/4 cup water
  • Optional: Raspberry sauce for garnish

Instructions

  1. Puree the raspberries with sugar until smooth. Strain the mixture to remove seeds.
  2. Sprinkle gelatin over water in a small bowl and let it sit for 5 minutes. Then, heat until dissolved.
  3. Whip the heavy cream with vanilla extract until soft peaks form.
  4. Combine raspberry puree with the gelatin mixture and fold it into the whipped cream gently.
  5. Transfer the mousse into heart-shaped molds and refrigerate for at least 240 minutes or until set.
  6. Once set, remove from molds and serve with raspberry sauce if desired.

Notes

For best flavor, use fresh raspberries. If you don’t have heart-shaped molds, regular ramekins work as well.
