A light and airy raspberry mousse filling that is perfect for cakes, tarts, or enjoyed on its own, capturing the essence of sweet nostalgia.

Ingredients

  • 2 cups fresh raspberries
  • 1 cup sugar
  • 1 cup heavy cream
  • 1 packet gelatin
  • 1/4 cup water
  • 1 teaspoon vanilla extract

Instructions

  1. Combine fresh raspberries and sugar in a saucepan. Cook over medium heat until the raspberries break down into a purée.
  2. Strain the mixture to remove seeds and set aside to cool.
  3. Sprinkle gelatin over water in a small bowl and let it bloom for about 5 minutes.
  4. Heat the bloomed gelatin in the microwave until melted; combine it with the raspberry purée.
  5. Whip the heavy cream until soft peaks form.
  6. Fold in the raspberry mixture and vanilla extract until well combined.
  7. Chill the mousse in the refrigerator until spreadable, about 1-2 hours.

Notes

Use fresh, ripe raspberries for the best flavor. Chill the mousse properly for the perfect texture.
