Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, melted
  • 2 cups fresh raspberries
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a mixing bowl, combine flour and powdered sugar. Stir in melted butter until crumbly and press it into the bottom of the prepared dish to form the crust.
  3. Bake for 15 minutes, then remove from the oven.
  4. In another bowl, whisk together granulated sugar, eggs, lemon juice, salt, and zest until combined.
  5. Gently fold in the raspberries and pour the filling over the crust.
  6. Bake for an additional 20-25 minutes or until the top is set and lightly golden.
  7. Allow to cool completely before slicing into bars, then serve.

Notes

Best served chilled with extra powdered sugar or whipped cream. Store in an airtight container for up to a week.
