Delicious homemade brioche donuts filled with a light and creamy raspberry filling, perfect for any occasion.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 packet instant yeast
  • 1/2 cup milk, warmed
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 cup raspberry puree
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • Oil for frying
  • Additional powdered sugar for coating

Instructions

  1. Combine Dry Ingredients: In a bowl, combine flour, sugar, salt, and instant yeast.
  2. Whisk Wet Ingredients: In another bowl, whisk together the warmed milk, eggs, and melted butter until well combined.
  3. Mix the wet ingredients into the dry ingredients until a dough forms.
  4. Knead the dough for about 5 minutes until it becomes smooth.
  5. Place the kneaded dough in a warm spot and let it rise until it doubles in size, about 1 hour.
  6. Prepare the raspberry cream while the dough is rising.
  7. Roll out the dough and cut into donut shapes.
  8. Heat oil in a deep fryer or large pot over medium-high heat and fry the donuts until golden brown.
  9. Let the donuts cool slightly on a wire rack and then fill them with raspberry cream using a piping bag.
  10. Finish with a generous dusting of powdered sugar before serving.

Notes

Make sure your milk is warm (not hot) to activate the yeast properly.
