A refreshing quinoa salad bursting with fresh vegetables, herbs, and a zingy dressing.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1/2 teaspoon salt
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese (optional)

Instructions

  1. Rinse the quinoa thoroughly in a fine-mesh strainer under cold running water for about 2 minutes.
  2. Bring to a boil in a medium saucepan with the rinsed quinoa, water, and salt.
  3. Reduce heat to low, cover, and simmer for 15 minutes until tender.
  4. Remove from heat and let stand covered for 5 minutes.
  5. While the quinoa cools, chop the cucumber, cherry tomatoes, red onion, parsley, and mint.
  6. Whisk together the olive oil, lemon juice, honey, salt, and pepper for the dressing.
  7. Once the quinoa has cooled, add the chopped vegetables and herbs to the bowl.
  8. Pour the dressing over the salad and toss gently to combine.
  9. Refrigerate for at least 30 minutes before serving.

Notes

Add a clove of minced garlic to the dressing for extra flavor. The salad can be made ahead of time for deeper flavors.
