A comforting skillet meal featuring lean ground beef and the natural sweetness of sweet potatoes, ready in just 30 minutes.

Ingredients

  • 1 lb (450g) lean ground beef
  • 2 medium (approx. 500g) sweet potatoes, peeled and diced small
  • 1 (approx. 150g / 1 cup) onion, diced
  • 1 (approx. 150g / 1 cup) bell pepper, chopped
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 1/2 cup (120ml) beef broth
  • Fresh parsley for garnish

Instructions

  1. Brown the beef in a large skillet over medium-high heat for 5-7 minutes, then drain excess fat.
  2. Add the diced sweet potatoes, onion, and bell pepper, then sprinkle in garlic powder, paprika, cumin, salt, and pepper. Stir for 1 minute.
  3. Pour in the beef broth, stir to combine, and bring to a gentle simmer. Cover and simmer for 10-12 minutes or until sweet potatoes are tender.
  4. Reveal the skillet, increase the heat to medium-high, and cook for an additional 2 minutes to reduce any remaining liquid.
  5. Adjust seasoning if needed, then sprinkle chopped fresh parsley over the top before serving warm.

Notes

Make sure sweet potatoes are cut into small, uniform pieces for even cooking. Leftovers can be stored in an airtight container for 3-4 days.
