A simple and delicious carrot cake dump cake topped with cream cheese frosting, perfect for any gathering.

  • 1 box of yellow cake mix
  • 2 cups shredded carrots
  • 1 cup chopped pecans or walnuts (optional)
  • 1 cup crushed pineapple, drained
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Mix together the cake mix, shredded carrots, chopped nuts, crushed pineapple, eggs, vegetable oil, cinnamon, and nutmeg in a large bowl until well combined.
  3. Pour the mixture into the prepared baking dish and spread it evenly.
  4. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  5. Beat together the softened cream cheese, powdered sugar, and vanilla until smooth to prepare the topping.
  6. Spread the cream cheese mixture generously on top of the cooled cake.
