  • 1 cup cream cheese
  • 1 cup sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, sugar, and cream cheese until smooth and fluffy.
  3. Beat in the egg and the vanilla extract.
  4. Stir in the pumpkin puree until well incorporated.
  5. Mix together the flour, baking soda, cinnamon, nutmeg, ginger, and salt in a separate bowl.
  6. Add the dry ingredients to the pumpkin mixture, mixing until just combined.
  7. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow to cool before serving.
