A hearty combination of mashed potatoes and seasoned beef layered with fresh toppings, perfect for a quick dinner or satisfying meal.

Ingredients

  • 4 large potatoes
  • 1 pound ground beef
  • 1 cup diced bell peppers
  • 1 cup diced tomatoes
  • 1/2 cup corn
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 2 green onions, sliced
  • 1/4 cup taco sauce
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Boil the potatoes until they are tender. Once done, mash them and season with salt and pepper.
  2. Heat some olive oil in a skillet over medium heat. Cook the ground beef until it is browned.
  3. Add the bell peppers, tomatoes, and corn to the beef. Season with taco sauce and cook until the veggies are softened.
  4. Layer the mashed potatoes first in a bowl, followed by the beef mixture. Top it off with cheese, sour cream, and sliced green onions.
  5. Serve hot and enjoy!

Notes

For a spicier kick, add jalapeños or your favorite hot sauce to the beef mixture.
