A heartwarming pot roast recipe that brings family together with rich flavors and tender beef.

Ingredients

  • 3 to 4 pounds of chuck roast
  • 2 tablespoons of olive oil
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 4 carrots, cut into 2-inch pieces
  • 4 potatoes, cut into quarters
  • 2 cups of beef broth
  • 2 teaspoons of dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Heat the olive oil over medium-high heat in a large Dutch oven.
  3. Sear the chuck roast until browned on all sides.
  4. Sauté the onion and garlic until softened, about 3-4 minutes.
  5. Combine the roast with carrots, potatoes, broth, thyme, and bay leaves.
  6. Bring the mixture to a gentle simmer.
  7. Bake in the oven for 3-4 hours until fork-tender.
  8. Remove the bay leaves before serving.

Notes

Pair with buttery mashed potatoes or a fresh garden salad. Store leftovers in the fridge for up to 4 days or freeze for up to 3 months.
