A delightful and colorful salad made with crunchy pistachios, sweet cranberries, and creamy feta cheese, perfect for a light meal or side dish.

Ingredients

  • 2 cups mixed greens (spinach, arugula, etc.)
  • 1 cup chopped celery
  • 1/2 cup dried cranberries
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste
