A delightful dessert featuring caramelized pineapples and cherries on top of a moist cake, perfect for gatherings.

  • 1/4 cup butter
  • 1 cup brown sugar
  • 1 can (20 oz) pineapple slices
  • Maraschino cherries
  • 1 1/2 cups flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 2 eggs
  • 1/4 cup vegetable oil
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the butter in a round baking pan and stir in the brown sugar evenly.
  3. Arrange pineapple slices over the sugar mixture and place cherries in the center of each slice.
  4. In a separate bowl, combine flour, granulated sugar, baking powder, and salt.
  5. In another bowl, mix together milk, eggs, oil, and vanilla.
  6. Add the wet ingredients to the dry ingredients and stir until combined.
  7. Pour the batter over the pineapple and bake for 40-50 minutes or until a toothpick comes out clean.
  8. Allow to cool slightly, then invert onto a serving plate and serve.

Notes

For best results, drain pineapple slices well and use a round baking pan. Add a pinch of cinnamon for richer flavor.
