Delicious, chewy bars infused with tropical pineapple and crunchy coconut, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour, sifted
  • ½ cup unsweetened shredded coconut
  • ½ cup butter, softened
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 cup crushed pineapple, drained
  • ½ teaspoon vanilla extract
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan or line it with parchment paper.
  2. Cream together the softened butter and brown sugar until light and fluffy.
  3. Add in the eggs, one at a time, mixing well after each addition. Follow with the vanilla extract.
  4. Combine the flour, baking powder, shredded coconut, and a pinch of salt in a separate bowl.
  5. Mix the dry ingredients into the wet ingredients, folding gently until just combined.
  6. Fold in the drained crushed pineapple until evenly distributed.
  7. Bake in the preheated oven for 25-30 minutes until the edges are golden brown.
  8. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely and then cut into squares.

Notes

For extra tropical flavor, serve with whipped cream or vanilla ice cream. Store in an airtight container at room temperature for up to 3 days.
