A flavorful Peruvian classic featuring tender chicken in a zesty green sauce, paired with fluffy rice.

  • 2 cups rice
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup fresh cilantro
  • 1/2 cup fresh parsley
  • 2 jalapeños (seeds removed for less heat)
  • 1/4 cup olive oil
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Lime wedges for serving

Instructions

  1. Blend the green sauce: In a blender, combine cilantro, parsley, jalapeños, garlic, and olive oil to create a vibrant green sauce. Blend until smooth and set aside.
  2. Sauté the onions: In a large pot, heat some olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Brown the chicken: Add the chicken pieces, season with salt and pepper, and brown them on all sides for about 10 minutes.
  4. Incorporate the rice: Stir in the rice, mixing well to coat it with the flavorful juices.
  5. Add the chicken broth: Pour in the chicken broth and bring everything to a boil.
  6. Simmer and cook: Lower the heat, cover, and let simmer for about 20 minutes.
  7. Serve your delicious dish with the green sauce drizzled on top and lime wedges on the side.

Notes

For a deeper flavor, marinate the chicken in lime juice, garlic, and pepper for an hour. Adjust jalapeños to your preferred heat level.
