A colorful and flavorful dish combining basmati rice with nuts and dried fruits, perfect for special occasions.

Ingredients

  • 2 cups basmati rice
  • 4 cups water
  • 1/2 cup dried apricots, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup pistachios, chopped
  • 1/2 cup almonds, sliced
  • 1/4 cup raisins
  • 1 onion, finely chopped
  • 2 tablespoons butter or oil
  • 1 teaspoon turmeric
  • 1 teaspoon cinnamon
  • Salt to taste
  • Fresh herbs (like parsley or mint) for garnish

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Then soak it in water for 30 minutes.
  2. In a large pot, heat the butter or oil and sauté the chopped onion until it turns golden.
  3. Add the turmeric, cinnamon, and salt to the pot. Cook for another minute.
  4. Drain the soaked rice and add it to the pot with 4 cups of water. Bring to a boil, then reduce the heat to low, cover, and let it simmer for 15-20 minutes until the rice is cooked and the water is absorbed.
  5. In a separate pan, lightly toast the nuts and dried fruits until they are fragrant.
  6. Once the rice is cooked, fluff it with a fork and gently mix in the toasted nuts and dried fruits.
  7. Serve warm, garnished with fresh herbs.

Notes

For extra flavor, consider adding a pinch of saffron while cooking the rice. You can use a combination of different nuts based on your preference.
